Tapioca Pearls (Boba)

Chrysanthemum Bubble Tea (Boba) is actually something you can make at home relatively easily.  I made activated charcoal tapioca pearls (aka boba) and used honey and cold chrysanthemum flower tea.  If you are a fan of vitasoy chrysanthemum tea and pearls/boba, then this drink is for you!


INGREDIENTS

Tea (or tea flowers) - 1L

Hot water 1/2C plus water for boiling 

Activated charcoal - 1/2t

Tapioca starch 1/2C

Honey 1/4C


METHOD

Make the tea and refrigerate to cool. I made 1 litre in the morning.  You can skip this part if you want to use shop bought tea.

Make the pearls- I use a 1:1 ratio tapioca starch and hot water (1/2C).  I added 2 activated charcoal tablets to my hot water (each are approx 1/4t) and stirred to dissolve.

I slowly mix 1/2C water into 1/4C tapioca starch until it forms a liquid, then sort of fold in the other 1/4C tapioca starch with a leaf spatula until it forms a dough.



I then roll pieces roughly into a logs, then cut the logs into sections which I roll into balls.  They sort of warm in your hands and become flexible.

When you have rolled all your balls, cook them in a saucepan with hot water.  Make sure the water is boiling when you put them in and stir so they float, then cook for about 10-15mins (to your preferred texture).

When they are ready, scoop them out into honey.  They can sit in your honey until you want to serve. 

When ready, serve in glasses with some of the honey and pour in the cold tea.


TIPS

I wear plastic gloves when I work the dough so whatever colour I've made my pearls doesn't end up staining my hands.

Do not cook any pearls you want to keep. Freeze them after shaping. You can boil them from frozen- just extend the boiling time. If you cook them then freeze them they will be hard.
