Blue pea flower and coconut agar agar

 

I recently purchased blue butterfly pea flowers from my.blue.tea to make nasi kerabu... I got both the dried flowers and the powder

Storing and using the powder form is convenient and really speeds up the process for making some stunning agar agar


INGREDIENTS

Blue Pea Agar Layer

1t (5g) Blue butterfly pea powder
150ml hot water
1.1L hot water
1/2 packet agar agar powder (12.5g)
180g caster sugar

Coconut Milk Agar Layer

1/2 packet agar agar powder (12.5g)
1L hot water
160g caster sugar
270ml coconut milk
1t salt

Containers

2 x 960ml square plastic containers (usually $2 Aud for a pack of 4 at supermarket) or similar volume takeaway plastic containers


METHOD

Blue Pea Layer

Mix butterfly pea flower in 150ml hot water to dissolve in a small jug

In a pot, add 1.1L hot water, agar agar powder and sugar.  Whisk before turning on the heat and bringing to a boil. Ensure that agar agar powder is completely dissolved

Add blue pea water, stir well and bring back to a boil.  Skim to remove any impurities
Pour into a large pyrex jug - making sure to omit any sediment at the bottom (you should still have approx 1L in total)

Allow to cool for approx 30mins

Pour half of the cooled blue mixture (500ml) into each container.  Set aside to cool and layer starts to solidify

Coconut Milk (Santan) Layer

In a pot, add 1L hot water, agar agar powder and sugar. Whisk before turning on the heat and bringing to a boil. Ensure that agar agar powder is completely dissolved

Add coconut milk and salt and whisk to combine before bringing mixture to a boil.  Skim to remove any impurities/foam

Pour into a pyrex jug and omit any sediment (you should have approx 1L in total).  Allow to cool for approx 30mins

Carefully pour half of the coconut mixture (500ml) over the back of a spoon into each container over the blue layer.  Set aside to cool and solidify

Once set, chill in the refrigerator for approx 3 hours before serving

To serve, open the plastic lid of container.  Gently squeeze the sides to loosen the Agar Agar from the container. Place a plate on top of container. Invert and remove container


Slice into diamonds or rectangles with a sharp thin knife (like a fish filleting knife)
