Prawn and Snow Pea Salad

 


Prawns and snow pea salad is one of our summertime favourite salads.  You can easily swap the fruit and cheese if availability is an issue


INGREDIENTS

150g snow peas trimmed

2 packets of snow pea sprouts 

2 yellow peaches, stoned, sliced

3/4 cup mint leaves

36 (1kg) medium cooked prawns, deveined, tail on

100g goats cheese


Lime & chilli dressing

2T lime juice 

2T extra virgin olive oil

1T white wine vinegar 

1 garlic clove crushed

1/2 long red chilli, seeded, finely chopped

1/2t caster sugar


METHOD

Cook snow peas *2 mins, refresh and cut on diagonal 

Mix dressing in a jar, shake and season

Toss salad leaves together and arrange into shape of a wreath

Add peaches into middle, prawns to bottom and top

Crumble and dot goats cheese around
