Black sesame cheesecake is one of those no bake recipes that are "sweet" but taste "savoury". These are perfect for pot luck where you want to make something in advance! In this recipe we made 2 layers
INGREDIENTS
4 pkt sesame snaps
1T coconut butter (melted)
1C caster sugar (1/4C x 4)
600ml heavy cream for whipping (300ml x 2)
2 pkt (250g) Philadelphia cream cheese (must be room temp)
60g Black sesame paste (adjust quantity to taste)
3T lemon juice
METHOD
Line a 20x20cm square tin with baking paper, then the sesame snaps
Melt coconut butter in microwave
Pour onto sesame snap base to "glue together" and place in fridge to set
Whip 1 pkt of cream cheese with black sesame paste until smooth and combine with 1/4C of the sugar
In a separate bowl whip cream with 1/4C sugar until in peaks
Fold the cream into the cream cheese to combine
Pour over the sesame snap base and freeze overnight
Whip 1 pkt of cream cheese with lemon juice until smooth and combine with 1/4C of the sugar
In a separate bowl whip cream with 1/4C sugar until in peaks
Fold the cream into the cream cheese to combine
Reserve about 1/3C of mixture and microwave for 30 seconds (so it is runny)
Pour the second layer over the black sesame layer and smooth
Pour the reserved liquid to create a smooth finish, decorate (optional) and freeze overnight
To serve, use a hot knife to divide at each sesame snap. Needs approx 2hours bench to be softened
