Coffee and dark choc chip cookies

The aroma of coffee is so delicious!  This is a quick and easy coffee and chocolate biscuit recipe, using mostly pantry staples


INGREDIENTS

125 g butter

1/3C caster sugar

1/3C dark brown sugar

2 sachets instant coffee (or 1T)

1 egg

1 1/4C self-raising flour

1/2C plain flour

1C dark choc chips


METHOD

Preheat oven to 180C

Cream butter and sugars. Beat in coffee, then egg

Stir in flour and choc chips until mixed

Divide mixture and roll into approx 34 balls

Place on a lined baking tray or silpat mat, spacing for some cookie expansion

Bake for 15 minutes or until lightly browned

Allow to cool on tray (or eat immediately)

Store any spares in an airtight container
