Honey wool roll

 

I recently bought some tea tree honey directly from Pure Local Honey (a coastal producer).  It is beautifully floral and perfect for bread filling and glazing (as well as just drinking straight).  Wool rolls are trending at the moment and a great way to feature Australian tea tree honey


INGREDIENTS (makes 2 loaves)

60g (1/4C) honey

1 large egg

300ml warm milk

7g yeast with bread improver

150ml plain yoghurt

600g bread flour

1/2t salt

4 x 240g packets sultanas (reconstituted in honey water or a juice of your choice)

1T oil for greasing 

2T milk and 1T honey for glazing


METHOD

Add into stand mixer bowl your honey, egg, milk, yeast, yoghurt, flour and salt.  Knead with dough hook for 15 mins

Turn the dough out and proof for an hour in an oiled pyrex bowl

After first proof, dust benchtop with some extra flour, knock down dough and make into 2 portions

Roll each portion out into rectangles and use a cutter to slice ribbons on one half edge

Lay strained sultanas along the other half and roll lengthways, first tucking in the sultanas and finishing off with the wool rool strips (see linked video)

Line a 20cm round baking tin and place wool roll for 2nd proof onto baking paper

Preeheat oven to 180C fan forced

Repeat shaping process for other half and proof for approx 30 mins

Glaze with 1T of milk then bake for 25 mins

Remove from oven and glaze whilst hot with 1T milk mixed with 1T of honey

Allow to cool or use a knife to unmould bread from baking tin and pull or cut to serve
