Cobbler is something I make when I have excess fruit. The thing I love is that you can pretty much use any fruit that bakes and keeps shape. You can also use any kind of syrup (sugar) and/or jam to create unique flavours. For me, I really liked the taste of ginger syrup and had leftovers from tofufa, so I used it in this recipe
INGREDIENTS (Baked plums)
3 plums (cut in half and seed removed)
marmalade (can be sub for any jam)
ginger syrup (can be sub for simple syrup 1:1 caster sugar/water)
Note: You can also shortcut baking plums by buying and using canned "pie fruit" from the supermarket
METHOD (Baked plums)
Preheat oven to 200C
Put cut half plums and place cut side up snugly into a pyrex or oven safe dish in a single layer
Cover with jam and syrup
Bake for 25-30 minutes until the plums are soft, burnished and on the verge of breaking down
Leave to cool, making sure you reserve cooking juices if you want to flavour
INGREDIENTS (Cobbler)
50g butter, softened
1/2C (60g) caster sugar*
3/4C (180g) self raising flour
1/2C (120g) plain flour
50ml milk
300g fruit (3 plums or 6 x half plums and 1 large apple diced)
1 egg, beaten
Icing sugar, to dust (optional)
*I subbed marmalade/ginger syrup/juice from baking the plums
METHOD (Cobbler)
Preheat the oven to 180C
Cream the butter and sugar* together until pale and fluffy
Sift in the flour with a little of the milk and mix until well combined. Slowly incorporate the rest of the milk until the mixture becomes a smooth, sticky dough
Core and dice the apple into bitesize pieces. Arrange the apple with the roasted plums in an oven proof dish that holds the plums and apple snugly
Pour the flour/milk batter over the fruit and brush with the beaten egg, then put in the oven for 35-40 minutes until golden brown
Note: If you would like to freeze, do so at this point. To reheat, cover with foil and rebake from frozen for 45 mins at 160C
To serve: dust with a little icing sugar. This dish is best served hot or warm.. with a scoop of ice cream!
