Also you can google Fraisier Cake. It’s usually made with a ring mould and diplomat cream, which is pastry cream with whipped cream stabilised with gelatin.
INGREDIENTS
I used 2 large punnets of strawberries (big ones halved for deco, smaller ones whole for inside)
400ml of heavy cream whipped with 50g caster sugar and 20g skim powder
Sponge layer and strawberries inside brushed with 1T grand marnier mixed with 2T coconut water
METHOD
Put a sponge layer down
Surround with acetate
Arrange large strawberries cut side to acetate
Cover with whipped cream leaving a shallow in the middle
Fill the shallow with the small strawberries
Cover with whipped cream
Put a sponge layer in on top and press to firm
Top with rest of cream
Place into fridge to set for an hour or so along with spare
