Milkbread pullman loaf

 


Since we are in extended lockdown, I've bought a pullman loaf tin and this is my recipe for a single loaf of milkbread... 


INGREDIENTS

320g Bread Flour

5g Instant Dry Yeast

5g Sea Salt

20g Caster Sugar

1 Egg

200ml warm milk

Oil


METHOD

Warm milk in microwave, then add to mixing bowl in the following order: egg, warm milk, sugar, yeast, flour, salt

Machine knead for approximately 25mins

Oil a pyrex bowl and proof until doubled (roughly an hour)

Line your pullman tin with baking paper (trim to fit - this just makes it easier to remove the loaf after baking)

Dust with flour a work surface, roll and shape the dough into 3 pieces for the pullman loaf tin

Preheat oven to 180C fan forced

Proof until at least halfway up the pullman loaf tin (approx 25mins), seal with lid and place on 2nd lowest rack in oven

Bake for 1 hour and cool before slicing
