Melting Moments are quick to whip up and require very few ingredients. They are also customisable as you can change the filling flavour easily by substituting
INGREDIENTS
Cookies:
125g butter, softened
3/4C (115g) plain flour
1/4C (45g) soft icing mixture
1/3C (50g) custard powder
Filling:
60g butter, softened
2/3C (110g) icing sugar mixture
2t cocoa powder
1T hot water
METHOD
Preheat oven to 160C fan forced. Line an oven tray with baking paper or a baking mat. Beat the butter until pale and creamy. Sift in the flour, icing sugar and custard powder powder and mix to combine
Use your hands to roll the dough mixture into balls. Space the balls apart on the tray as they will expand
Use a fork to gently flatten each ball
Bake in preheated oven for 15 minutes. Remove from oven and set aside overnight to cool or for at least 30 minutes
Use a whisk to beat the filling butter and icing sugar in a bowl until light and fluffy. Add the cocoa powder to the hot water and mix. Whisk into the butter mixture. If too soft refrigerate for about 10 minutes to set the butter
Spread the butter mixture over the flat side of half the biscuits and sandwich together with remaining biscuits
