Yudane loaf (mixed flour)


This is a yudane loaf made with a mix of sprouted whole wheat and white bread flour.  It also uses lighthouse yeast with bread improver for a super soft bread kinda like the brand "country split"

INGREDIENTS
50g/50ml yudane (white bread flour/boiling water)
100g sprouted whole wheat flour
140g bread flour
1 x 7g yeast with bread improver
20g caster sugar
1t salt
1C (240 mL) milk (microwave 1 min)
1T oil

METHOD

Make the yudane and rest for the day

Put into mixing bowl in order: milk, sugar, yeast, oil, flours and salt.  Combine on speed 1 (slowest) then knead on 6 for 20 mins

Proof in an oiled bowl for 40 mins (rapid proof in oven at 30C)


Knock down and shape into 2 rolls for loaf tin and proof in tin for 30 mins


Preheat oven to 180C fan forced and then bake for 40mins on 2nd lowest shelf


Remove from loaf tin and cool before slicing
