Something easy to do with leftover ham from Christmas
INGREDIENTS
1-2C ham (diced)
1-2C shredded cheese
1 serve of brioche bread dough (I used Laucke golden brioche bread mix which comes with a 4g yeast satchel and you need 250ml water)
Mixed herbs to garnish (optional)
METHOD
Make the bread dough (add 250ml water to mixing bowl, add 4g yeast satchel then bread mix and knead for 20 mins)
Oil a pyrex bowl and proof dough covered in plastic wrap for approx 45mins
Line a 23cm round baking tin with baking paper
Knock back dough in mixer, then remove 2/3 and place on benchtop. Roll out and divide into 8 pieces
Add diced ham and cheese to remaining 1/3 dough in mixer. Knead on lowest setting to combine them remove. Divide into 8 pieces and roll into balls
Wrap each ham and cheese ball with a piece of plain dough and place into lined baking tin, putting the first one in centre and other seven around
Proof for approx 30 mins
Spray with some plain water and sprinkle mixed herbs over top (I used salt bush and bush tomato)
Preheat oven to 180C fan forced
Proof for approx 10-15 mins more
Bake for approx 25-30 mins and cool
