In the quest for the perfect white loaf, I've decided on white quinoa as the perfect topping. It's smaller than sesame seeds and sticks better
INGREDIENTS
200ml milk (fridge cold, microwaved for 1min)
100ml warm water (approx 40C)
20g caster sugar
1 x 7g satchel of lighthouse yeast + bread improver
1T (20ml) oil
300g bread flour (I'm also using lighthouse)
1t salt
oil for proofing
flour for shaping
white quinoa seeds for topping
water in a spray bottle
METHOD
Add ingredients in order up to salt into mixing bowl
Combine on speed 1 then knead on 6 for 20 mins
Line loaf tin with baking paper
Proof dough in an oiled bowl for approx an hour (45-60 mins)
Fully knock back dough in mixer
Flour surface and remove dough
Shape into a roll and place into loaf tin seam side down
Proof in tin for a further 30 mins
Spray with water and sprinkle on quinoa seeds then spray again with more water
Preheat oven 180C
Bake for 45 mins on a low/bottom rack
