Banana and macadamia loaf

Taking the opportunity to feature a recipe with macadamias in NAIDOC week


INGREDIENTS

2-3 bananas (150g) 

50g macadamia butter (I used Hand n Hoe brand)

100g butter (softened) 

1/3 - 1/2C honey

3 eggs (medium) 

1 1/4C 00 flour 

3t baking powder

Pinch of Cream of tartar (1/4t)


METHOD

Preheat fan forced oven to 160 celcius

Line a bread tin with baking paper 

Mash your bananas and stir through the macadamia butter

Separate the eggs

Whisk whites with pinch of cream of tartar

In a separate bowl, cream egg yolks, butter and sugar together until consistent

Add flour, banana mix, baking powder - lightly mix - do not overbeat

Fold in the egg whites

Turn mixture out into prepared tin

Bake for 45-60 minutes in your preheated oven
