Chewy chocolate cookies

By special request, chewy chocolate cookies.  These are chewy, chocolatey and caramelly!


INGREDIENTS (20 cookies)

1/3C caster sugar

2/3C brown sugar

1t salt

120g unsalted butter (melted)

1 large egg

1t vanilla bean paste

160g plain flour

1/2t baking soda

1T cocoa powder

200g chocolate melts (or chunks, I used Cadbury white)


METHOD

Whisk the sugars, salt and melted butter until there are no lumps

Whisk in the egg, vanilla, baking soda and cocoa powder until well combined

Add the chocolate melts, sift in the flour and then use a spatula to fold through, being careful to just combine

Transfer the dough to a sheet of baking paper and roll up into a cylinder. Chill the dough overnight (or for at least 30 minutes to set the melted butter)

Preheat the oven to 180C fan forced and line 2 baking trays

Cut the dough with a sharp knife into 20 rounds and place spaced out on each baking tray as the cookies will spread

Bake for 15 minutes, or until the edges have started to brown.  To ensure the chocolate melts have set, cool completely before removing from tray
