Soda (beer) bread


Soda Bread

The Shrimp Boil I made tonight left me with quite a lot of beer (in the open can) so I decided to make some soda bread aka beer muffins... and it actually turned out to be super easy and delicious!


INGREDIENTS

250g self-raising flour (I used lighthouse extra white low protein)

80g caster sugar

285 ml beer (I used Capital alc-less)


METHOD

Preheat the oven to 180C fan forced

Whisk together the flour, sugar and beer. The batter will be pretty thick

Pour the batter into a silicon 6 muffin tray.  Tap on bench top a couple of times to settle batter/remove air pockets

Bake for 30-35 minutes on the middle rack

Take out of the oven and munch with butter ASAP!
